Steak School: Beef Tenderloin #shorts

Steak School: Beef Tenderloin #shorts

Filet mignon was the first cut of beef I ever learned the name of. It’s one of 3 primary cuts (ribeye, strip, filet mignon), and likely the most controversial.

It’s rare that you’ll find a steak aficionado or nerd (like me) who will say its their favorite cut, and most will even say its overrated. This is due to the lack of marbling & flavor, and also the premium price tag.

However, I believe the filet mignon is the ultimate crowd pleaser. It will always be tender, and even the pickiest of eaters will enjoy it.

Its also a great steak if you want to experiment trying different levels of doneness. If you believe you only like “well-done” steaks, try a filet cooked to medium, and work your way down to rare.

Hint: Walk by the meat section every time you go to the store and get an idea of what the average price/lb filet mignon costs. Every once in a while there are major discounts, take advantage!

Is there a reason you stew filet meat instead of just searing it as steak tips? Feels like a waste

Those filets have been breakfast every morning. Tender, but he’s right you NEED to season it or baste it or there is nothing going on except a slight beef flavor. Easy on the jaw, but don’t just use the table salt and pepper

NB: this is American butcher, & not how the rest of the world sees it! Certain things will be the same, certain bits will cover SOME if the same, others will use the same name for different parts! Eg, the tenderloin is the fillet. Very much consisting if you see a butcher from one part of the world then another, so don’t get confused

Exactly why people love rare meat. You do not want every cut of meat rare when you go out for dinner but this one is one you do.
