Cranberry Salad – Subscriber Sunday #37 – A Make Ahead Recipe for the Holidays You Will Love!

Cranberry Salad

1 pound cranberries
1 cup white sugar
1 pint heavy whipping cream
3/4 bag mini – marshmallows (about 4 1/2 cups)
20 ounce can crashed pineapple, well drained

Wash the cranberries and remove any bad berries. Grind the cranberries and then stir in the white sugar. Let stand for 2 hours.

Whip the heavy cream to stiff peaks. Stir in the marshmallows and allow to stand in the refrigerator for 2 hours.

After allowing the cranberry/sugar mixture and the whipping cream/marshmallows mixture to stand for two hours, drain the can of crushed pineapples. Fold together the pineapple with the cranberries, sugar, whipping cream, and marshmallows.

Refrigerate 8 hours or overnight.

Perfect for Thanksgiving or Christmas dinners!

    My MIL gave me this recipe when i first married her son. The only difference was that we used a carton of Cool Whip instead of the cream and sugar. That was in 1964.

    I’ve never been a real fan of cranberry salads because usually they are so bitter, but I can’t wait to try this for Thanksgiving! It really looks like a jello salad, really different!!

    Im 62 yrs old. My mother started making this every year since I was little. We have a different version. We add crushed apples with ours. Also, walnuts. The favorite way for our family to eat this is frozen. It’s like ice cream.

    I have a cranberry salad receipt that’s been in our family similar to this one but different…2 packages of cranberries, 1 can crushed pineapple, one or two oranges….wash the berries, put them through your Kitchen Aid Processor with the grinding attachment ,( all three ingredients go through the grinder)…mix all together in the same large bowl….add some sugar…let this sit over night…the next day stir in more sugar( sugar to taste)…best to make two days before using….keep adding sugar to taste…this can be tart!….THATS IT!

    Make a Cranberry Casserole for Thxgvg that is out of this world:
    Arrange in bottom of 9×13 casserole baking dish:
    – 3 cups sliced Red Delicious Apples
    -2 cups fresh or frozen cranberries
    -1 1/2 cups sugar
    -3/4 cup water
    Topping (mix & crumble over top):
    1 stick melted butter
    1/2 cup brown sugar
    1/3 cup self rising flour
    1 cup oats
    1 cup chopped pecans (optional)
    Bake at 350degrees for 45 minutes to one hour. Let set for 15 minutes before serving.

    I have that same food processor! I’ve had it for decades, I thought it died about 5 years ago. I took it apart, oiled the parts and reassembled. Good as new!

    We have a very similar recipe that’s a family favorite, however, we use red grapes instead of pineapple. I’m curious to try it with the pineapple. By the way, if there’s any left over, it’s great on waffles the next morning.

    I make this recipe but I add a few green grapes cut in half and I grind an apple and add I to the mix especially if we have a larger group coming it all goes well together

    My Mom’s recipe is similar and so special. Fresh cranberries, ground, red grapes cut in halves or quarters, sugar, whipped cream, chopped walnuts. It isn’t Thanksgiving without it for us!

    I know when I was in my early twenties I went to Wisconsin and went to a cranberry fields and they are flooded in water. I was surprised by that it wasn’t just a little bit of water more than what they grow rice in. It was like canals filled with water.     I remember as a little child my mom making this cranberry salad every Thanksgiving, she still makes it to this day. (she is 90 yrs young). It looks just like the one she makes but her process is a little different and she adds chopped 1 cup walnuts to hers. That little bit of crunch just does something for it.
    Since I got married I’ve been making also, everyone who’s had it loves it and asks for the recipe. I have bought extra bags of Cranberries while in season and put them in the freezer so I can make it anytime of the year. I have also used pecans instead of walnuts and it’s just as tasty.
    This is the first time I’ve seen you two, I’m going to subscribe to your channel.
    Thank you for sharing their recipe, I have never heard of anyone else making this salad.
